Saved from extinction and recultivated by corn farmer Sepp as "Gailtal white country corn".
The "Gailtal white country corn" is an old corn variety, unchanged for centuries, that had almost fallen into oblivion. Sepp Brandstätter, a mountain guide, nature lover and passionate organic farmer, has rediscovered the seed on his farm. Previously, the original corn had to give way to the higher-yielding hybrid varieties, before Sepp found the right soils for this corn in the Gailtal and began to cultivate the ancient corn variety again. Free of artificial fertilizers, but with a lot of idealism and commitment, the resistant and absolutely GMO- and gluten-free corn is now growing again around Brandstätter's farm in Würmlach. Manual seed harvesting ensures that the seeds are kept pure, maintaining their high quality. During his guided tour and tasting on the field as well as at his farm, the farmer is happy to show the difference to conventional corn varieties, but also the more elaborate and much healthier way of producing the fine nutty polenta flour, or country corn semolina.
